I come from a TrixBox system where I could use a great option, "PBX-staus" that shows all active connections and registered devices, their UDP port, their source IP, and other information

In Elastix is not there something similar?

When you type "asterisk -r" you get access to a whole bunch of things. "sip show peers" is nice. "dahdi show channels" is also kinda cool.

You may also get this same information in the unembedded FreePBX interface under "Tools"-> "Asterisk Info". This page should show you most of the information that you are requesting. The Elastix dashboard will also give you a brief overview of how many SIP devices are registered to the server.
